The grapes for this unique bottle-fermented sparkling wine come from the sunny vineyards that surround the Sabiona monastery, known as the “Acropolis of Tyrol”. The strict selection, the uncompromising yield reduction and the gentle vinification give this sparkling wine its unique character.

Vinification
The grapes are picked exclusively by hand. After gentle crushing, the wine undergoes a careful fermentation in stainless steel at a controlled temperature, followed by refinement on the lees for several months. After the addition of the tirage dosage, the wine is bottled and stored for a second fermentation and a minimum of 36 months on the lees. No dosage.

Fruity nuances of peach and yellow flowers, some quince, spiced bread and brioche
Taste
Aromas of floral notes, ripe and crisp fruit and spicy herbs underline the bright alpine character of this sparkling wine on the long finish.
